Low-Carb Greek Tzatziki

Serves 8, your time = 5 mins, cooking time = 0.
One serving contains 11.3g protein, 5g carbs and 0.2g of fiber for 4.8g of net carbs.
Tzatziki is probably the most common dish on any Greek table. It’s also one of those dishes where every cook has a different version on the “authentic recipe”. I just love this side dish; I can eat it with almost anything, providing I am not meeting anyone the next day :-).


Its relatively low-carb and although it goes better with a great hunk of fresh bread it also goes very well with gyros, Moussaka, BBQ chicken, steak, celery sticks and other veggies.. the list goes on and on.

Ingredients:
  • 2 Cups of Greek yogurt
  • 2 Cups of pealed and shredded cucumber
  • 2-4 cloves of garlic (depending on how antisocial you want to be)
  • 1 teaspoon of dill
Mix the yogurt and cucumber together, the crushed garlic and the dill, mix and let it stand for a minimum of 30mins, preferably a day in the fridge to let it ripen. When you serve it sprinkle with a bit more dill and a little olive oil.
