Low-Carb Greek Keftethes (Meatballs)

Serves 6, your time = 30 mins, chilling time = 2 hours
One serving contains 17g fat, 29g protein, 3.6g carbs and 1g of fiber for 2.6g of net carbs.

Keftethes are great cold as a starter or hot as part of the main meal, they never last long in my fridge.
Most cultures have their own twist on the humble meetball and most, like Keftethes are easy to make.

Ingredients:
  1. 1 lbs. ground beef
  2. 1/2 cup of onions, finely diced
  3. 3 cloves crushed garlic
  4. 1 egg
  5. 3 tbsp. grated cheese (players choice but I use feta)
  6. 1/4 cup heavy cream
  7. 1 tbsp. fresh mint, finely diced
  8. 1-cup almond flower
  9. Salt and freshly ground black pepper to taste
Combine all the ingredients (except the almond flour) and mix well. Cover and allow mixture to sit in the refrigerator for at least two hours. Roll into balls about the size of a golf ball then in almond flower so they are well covered. Fry them in a skillet with olive oil. Serve hot or cold.
